The flavours are of field mushrooms and clotted cream and the texture can become quite soft and, becoming robust and complex on the finish. The cheese has an undulating rind when ripe, with occasional streaks of russet. This cheese is so local, here that you can go and pick it up from the farm. Made from pasteurized milk.

Roquefort Vieux Berger £19.50 per 500 grams: from the milk of sheep that graze on the diverse grasses is used to make this wonderful “ Roquefort”, specially the goats which feed on the wildflowers that grow on the limestone plateaus found in the Aveyron Department – France. Vieux Berger is the of smallest of seven producers of this style of cheese. This cheese is remarkably creamy and piquant. For the ripening of the cheese the natural damp and airy caves found under the village of Roquefort-sur-Soulzon are chosen.
